This took my on a ride through my own memories with soup. My grandma used to make the best Minestrone soup. We have her recipe but, of course, it just doesn't taste the same. Growing up we also had the Campbell's chicken and celery soup to add to one of our meals on rotation...something with egg noodles and beef, I think. I always, always like my oyster cracker or saltines...the more, the better!
Soup is in my top 10 favorite foods! I could eat it every day. It's also comforting to make it! I enjoy when I have a day to make my long version of chicken soup, with all the make you feel better things like lemon, ginger, garlic and lots of fresh herbs! I also love making "leftover" soup - where I put leftover veggies from the week in the VitaMix along with some garlic, onions, herbs and stock for a quick warm dinner. I have a whole section of soups in my notebook of regular recipes!

Roasted butternut is my go to soup. Haven't made it with coconut milk though, will give that a go.
