Oh, that fish looks so good! I love the idea of food goals and your look back at the end of summer.
This summer (and most summers, honestly) was all about the berries. We picked a couple of buckets of blueberries at a farm nearby and froze a couple of bags. I’ve been making a blueberry syrup to top our pancakes and waffles almost once a week. I wish I would have picked more!
I think my favorite new recipe is a cucumber and avocado salad that I tried last week. I’ve already made it twice, and David told me he could eat it almost every day 😂
Living in Florida spoiled me for fresh fish. Hubs would go out on the deep sea fishing boat and come home with all kinds of lovely stuff -- mahi mahi, king mackerel, dolphin (not the mammal, the fish). I grew up living next to the north sea - so again, fresh fish. I don't like fishy fish or freshwater fish. I have an uneasy relationship with salmon (smoked salmon and brie on little rounds of french stick are a Christmas staple around here but beyond that, I'm a bit iffy).
I kind of failed my food goals this summer....the raspberries started to come in right when The Virus took me out so I missed my harvest...what's left is now wasp territory. I had hoped they'd make up for my sad strawberry season but alas, it's all on the blackberries now. Same goes for my pickling cucumbers...totally missed them. Ah well, next year......:)
Mahi mahi makes great fish tacos in our house! Top with those picked red onions and add some of pickled purple cabbage.
Thanks for introducing me to caprese (which we had all summer) and gazpacho I made some for you…except it wasn’t as good as my first time making it last summer…beginners luck I suppose.

As for me, this summer has been disastrous food wise lol. Hopefully, I'll be able to spend more time in the kitchen soon 🤞

Those grill marks are absolutely gorgeous! And your fish sandwich! I just ate lunch, but now I'm hungry again :)
